Private Chef ~ Antibes ~ Long Term

An experienced personal chef is required to take up a permanent position in a luxury property on Cap d’Antibes working alongside an established interior household team. The chef will be required to provide international cuisine at the highest level and must have extensive experience working previously in private service. 39 hrs per week. This position does not offer accommodation therefore candidates must live locally, speak English and French, have a driving license and their own transport as working hours may be required in the evenings and the area is not served by night public transport.

Salary €4.3k net pm with a 13th month salary

Start date: 2nd January is possible

 

Waiter/Maitre d’Hotel x 2 ~ Antibes ~ Long Term

Two experienced  service personnel/maitre d’hotel are required to take up permanent positions in a luxury property on Cap d’Antibes working with an established interior household team. 39 hrs per week. Head Chef ~ Avignon ~ 23rd August to 30th Sept 2020  POSITION NOW FILLED

A very experienced head chef who is accustomed to working in a private service environment is required for a fully-booked, very high-level rental property and private home in the Avignon area. The chef will replace the resident American chef from 23rd August to 30th Sept 2020 and will have a brigade of 3 or 4 trained USA interns who will be working at the property during the summer months. The rental guests are UHNW multi-nationals therefore the head chef must be able to offer an extensive range of international cuisines and be accustomed to catering for special dietary requirements, gluten-free/lactose-free/vegan/vegetarian etc.

The property is maintained to the standard of a 5* boutique hotel with very high-profile guests therefore staff discretion is essential.

The chef also needs to have a warm, engaging personality as this property has a very open kitchen and regular guests are accustomed to coming in and out to “see what’s cooking”, ask questions and watch the chefs at work, therefore the head chef must enjoy interacting with guests within his working environment - whilst still maintaining a professional relationship.

Applicants must speak fluent English and conversational French, must be able to drive and preferably be living on or close to the Cote d’Azur. They should also be able to invoice this client via their own ‘micro’ or company as a CDD is not offered with this position. Accommodation is provided if required.

 Live-in House Manager/Cook ~ Salon de Provence  POSITION NOW FILLED

Our client is seeking an experienced House Manager/Cook who can efficiently oversee the day-to day running operations of the home and cook for a small number of guests. The property is located close to Salon de Provence and the Principal is in residence approximately 4.5 months each year, often outside of the high season months. This is a semi-formal household maintaining very high standards. 

Applicants should have good managerial, organisational and interpersonal skills and be an excellent cook. They should enjoy maintaining and developing household manuals and checklists that will support a well-organized home. The position requires a high energy individual with an excellent work ethic who takes pride in their work.

 Duties:

  • Hire, train and supervise housekeeping staff

  • Work with other staff and services to maintain household and property standards

  • Cooking family-style meals for up to six people

  • Be comfortable kitchen-assisting the Principal who loves to cook

  • For any larger parties - supervise caterers and service team

  • Manage all food provisioning with an emphasis on seasonal and local products

  • Manage and a wine cellar

  • Manage household inventories

  • Update all household manuals as required

  • Screen/oversee contractors and low-season projects

  • Oversee household security and ensure that protocols are maintained by staff

  • Manage all maintenance systems

  • Occasional driving

Requirements:

  • Minimum 5 years previous experience working in a semi-formal or formal residence in a similar role

  • Fluent in both French and English

  • Excellent communication skills

  • Energetic problem solving with the ability to take the initiative

  • Polished and professional, a quiet presence in the household

  • Valid driver’s license

CDI contract  - 9am to 5pm Monday to Friday when Principal is not in residence with flexibility on working hours/overtime dependent on the Principal’s visits and schedule. A newly renovated large studio apartment on the property is offered as accommodation.

Pastry Chef ~ Chateau/Var ~ 9th to 22nd December  POSITION NOW FILLED

An experienced pastry chef who speaks English and preferably some French is required to help cater for a two week 'launch party' of 16 to 20 mainly American guests which is taking place at a luxury chateau in the Var region. The pastry chef will join a team of 4, Head Chef, Sous Chef and Commis. Excellent pastry, dessert and bread-making skills are required plus an ability and willingness to work as part of a cohesive team supporting other kitchen sections/chefs when necessary. Staff accommodation is offered for the full booking period. Exact dates still to be confirmed

Sous Chef & Pastry Chef & Commis Chef ~ Chateau /Var ~ 9th to 22nd December POSITIONS NOW FILLED

Three very experienced chefs – Sous – Pastry – Commis - are required for a special two week event being held at a luxury chateau located in the Var region. Applicants must be accustomed to working well within a small brigade, have a friendly, flexible approach, be used to working at the highest level of service and willing to assist the other chefs within the team. A good level of spoken English, excellent letters of reference and a recent DBS/Casier Judiciare are essential. Applicants should be located in France, preferably already located in the south – staff accommodation is provided for the full booking period.

Occasional and Summer Chef ~ Mougins  POSITION NOW FILLED

An experienced freelance chef is required to cook for occasional weeks outside of the summer season and full-time in the high season months. The chef needs to have good experience preparing gluten free/ vegetarian/vegan and good quality family/home cooking as well as being able to prepare classical and contemporary cuisines . Candidates should have a driving license and be willing to multi-task when necessary as they may be asked on occasion to drive the Principal or guests locally. The chef must be able to invoice the client via a ‘micro’ or other French-based business, have a flexible approach and must be fluent in both English and French.
